Pho Chu The (Uncle The's) is a family-owned pho specialist on Victoria Street, with a second shop in Footscray. The menu is limited to beef and chicken pho, with cuts ranging from rare beef and brisket to tendon, tripe and chicken offal; the family says it has served pho in Melbourne since 1989.
