Mada Bakery Cafe

Mada Bakery Cafe is a permanent Collingwood shopfront from pastry chef Marishell Evangelista, whose ensaymada started as a home-baking side project (previously trading as The Weekend Ensaymada / a coffee van) before this bricks-and-mortar opening. It specialises in Filipino ensaymada, a soft, pillowy sweet bread topped with butter, sugar and cheese in classic and premium flavours.
